Abalone with Oyster Sauce

Ingredients
- •400g fresh abalone, sliced thin
- •3 tablespoons oyster sauce
- •2 cloves garlic, minced
- •1 tablespoon ginger, julienned
- •1 cup shiitake mushrooms, sliced
- •1 cup bok choy, chopped
- •2 tablespoons soy sauce
- •1 teaspoon sesame oil
- •1/2 cup chicken stock
- •2 tablespoons vegetable oil
- •1 teaspoon cornstarch mixed with 2 tablespoons water
- •2 green onions, sliced
Directions
- 1Heat vegetable oil in a wok over high heat until shimmering.
- 2Add garlic and ginger, stir-fry for 30 seconds until fragrant.
- 3Add mushrooms and bok choy, stir-fry for 2-3 minutes until vegetables are tender-crisp.
- 4Add abalone slices and stir-fry for 1-2 minutes without overcooking.
- 5Pour in oyster sauce, soy sauce, and chicken stock, stirring to combine.
- 6Add cornstarch slurry to thicken the sauce, stirring constantly for 1 minute until glossy.
- 7Drizzle sesame oil over the dish and toss well.
- 8Transfer to a serving plate, garnish with green onions, and serve immediately over steamed rice.
