Ingredients

  • 400g fresh abalone, sliced thin
  • 3 tablespoons oyster sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, julienned
  • 1 cup shiitake mushrooms, sliced
  • 1 cup bok choy, chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/2 cup chicken stock
  • 2 tablespoons vegetable oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 2 green onions, sliced

Directions

  1. 1Heat vegetable oil in a wok over high heat until shimmering.
  2. 2Add garlic and ginger, stir-fry for 30 seconds until fragrant.
  3. 3Add mushrooms and bok choy, stir-fry for 2-3 minutes until vegetables are tender-crisp.
  4. 4Add abalone slices and stir-fry for 1-2 minutes without overcooking.
  5. 5Pour in oyster sauce, soy sauce, and chicken stock, stirring to combine.
  6. 6Add cornstarch slurry to thicken the sauce, stirring constantly for 1 minute until glossy.
  7. 7Drizzle sesame oil over the dish and toss well.
  8. 8Transfer to a serving plate, garnish with green onions, and serve immediately over steamed rice.
