Acar Timun (Indonesian Cucumber Pickles)
Indonesian quick pickles of cucumber, carrot, shallot, and chile in a sweet-sour vinegar brine with turmeric.

Ingredients
- •2 cucumber, seeded and cut into batons
- •1 large carrot, cut into thin batons
- •3 shallots, thinly sliced
- •1 red chili, thinly sliced
- •1/2 cup white vinegar
- •3 tbsp granulated sugar
- •1 tsp salt
- •1/4 tsp ground turmeric
- •1/4 cup water
Directions
- 1Place cucumber, carrot, shallots, and red chili in a nonreactive bowl.
- 2Whisk vinegar, sugar, salt, turmeric, and water until the sugar dissolves.
- 3Pour the brine over the vegetables and toss thoroughly.
- 4Press the vegetables down so they contact the brine evenly.
- 5Let the acar rest for 30 minutes at room temperature.
- 6Drain lightly before serving, or refrigerate in the brine for a stronger pickle.
💡 Seed the cucumber before pickling; removing the watery centre keeps the batons crisp as they sit in the brine.
