Acar Timun (Indonesian Cucumber Pickles)

Indonesian quick pickles of cucumber, carrot, shallot, and chile in a sweet-sour vinegar brine with turmeric.

Ingredients

  • 2 cucumber, seeded and cut into batons
  • 1 large carrot, cut into thin batons
  • 3 shallots, thinly sliced
  • 1 red chili, thinly sliced
  • 1/2 cup white vinegar
  • 3 tbsp granulated sugar
  • 1 tsp salt
  • 1/4 tsp ground turmeric
  • 1/4 cup water

Directions

  1. 1Place cucumber, carrot, shallots, and red chili in a nonreactive bowl.
  2. 2Whisk vinegar, sugar, salt, turmeric, and water until the sugar dissolves.
  3. 3Pour the brine over the vegetables and toss thoroughly.
  4. 4Press the vegetables down so they contact the brine evenly.
  5. 5Let the acar rest for 30 minutes at room temperature.
  6. 6Drain lightly before serving, or refrigerate in the brine for a stronger pickle.

💡 Seed the cucumber before pickling; removing the watery centre keeps the batons crisp as they sit in the brine.
