Accra (Haitian Malanga Fritters)
Haitian malanga fritters seasoned with herbs, scallion, garlic, and chile.

Ingredients
- •1 1/2 lb malanga, peeled and finely grated
- •3 green onions, finely sliced
- •2 cloves garlic, minced
- •1/4 cup fresh parsley, chopped
- •1 tsp fresh thyme leaves
- •1/4 Scotch bonnet pepper, minced
- •1 tsp salt
- •4 cups vegetable oil for frying
Directions
- 1Place grated malanga in a bowl with green onions, garlic, parsley, thyme, Scotch bonnet, and salt.
- 2Mix vigorously for 1 minute until the starchy mixture becomes cohesive.
- 3Heat vegetable oil to 350°F (175°C).
- 4Drop rounded spoonfuls of malanga mixture into the oil.
- 5Fry for 3–4 minutes, turning once, until crisp and deeply golden.
- 6Drain on paper towel and serve hot.
