Agedashi Tofu
Crispy fried tofu cubes smothered in a savory-sweet dashi sauce with bonito flakes and green onions.

Ingredients
- •14 oz firm tofu
- •1/2 cup cornstarch
- •2 cups vegetable oil for frying
- •1 cup dashi broth
- •3 tablespoons soy sauce
- •1 tablespoon mirin
- •1 teaspoon sugar
- •2 cloves garlic, minced
- •1 teaspoon grated ginger
- •2 tablespoons bonito flakes
- •2 green onions, sliced
- •1 teaspoon cornstarch slurry (mixed with water)
Directions
- 1Drain tofu and cut into 8 equal cubes. Pat dry with paper towels.
- 2Heat oil in a deep pan to 350°F. Coat tofu cubes evenly with cornstarch and fry until golden on all sides, about 4-5 minutes. Drain on paper towels.
- 3In a small saucepan, combine dashi, soy sauce, mirin, sugar, garlic, and ginger. Bring to a simmer.
- 4Stir in cornstarch slurry to thicken the sauce slightly, about 1 minute.
- 5Place fried tofu cubes in a serving dish and pour hot sauce over them.
- 6Top with bonito flakes and green onions. Serve immediately while the tofu is still warm.
