Air Fryer Blooming Onion

A whole onion opened into petals and coated with a dry double dredge, designed to crisp in an air fryer without a dripping wet batter.

Ingredients

  • 1 large sweet onion
  • 1 cup all-purpose flour
  • 2 tbsp cornstarch
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 3/4 tsp kosher salt
  • 2 eggs
  • 2 tbsp buttermilk
  • as needed neutral oil spray

Directions

  1. 1Trim the onion top but leave the root intact; place root-side down and make 12–16 cuts from 1/2 inch above the root to the board.
  2. 2Turn the onion over and gently separate the petals; soak in ice water 10 minutes, then drain and dry thoroughly.
  3. 3Mix flour, cornstarch, paprika, garlic powder, cayenne, and salt; whisk eggs with buttermilk in a second bowl.
  4. 4Work seasoned flour between every onion petal, spoon over the egg mixture, then dredge again with flour, pressing coating into the layers.
  5. 5Preheat the air fryer to 350°F (175°C) for 3 minutes; place the single onion root-side down in the basket and spray generously between the petals.
  6. 6Air fry 18 minutes without turning, then raise to 390°F (200°C), spray any dry flour patches, and cook 5–7 minutes more until crisp.

💡 Dry the onion completely after the ice-water soak; any trapped water turns the second flour coating into paste instead of a crisp shell.
