Air Fryer Caribbean Tostones
Green plantain rounds air-fried once to soften, smashed flat, then air-fried again for the crisp two-stage texture that distinguishes tostones from ripe fried plantains.

Ingredients
- •3 green plantains
- •2 tbsp avocado oil
- •3/4 tsp kosher salt
- •1 clove garlic, finely grated
- •1 lime, cut into wedges
Directions
- 1Cut the ends from the green plantains, score the peels lengthwise, remove the skins, and slice the plantains into 1-inch rounds.
- 2Toss the rounds with 1 tablespoon avocado oil and arrange them in one layer in the air-fryer basket.
- 3Air fry the green plantain rounds at 350°F (175°C) for 7 minutes without preheating or turning, until they begin to soften.
- 4Flatten each warm green plantain round to about 1/4 inch thick between pieces of parchment using the bottom of a glass.
- 5Mix the remaining oil with garlic, brush both sides of the smashed plantains, and season with salt.
- 6Return in one layer and air fry at 400°F (205°C) for 7–9 minutes, turning after 4 minutes, until crisp at the edges; serve with lime.
💡 Use genuinely green plantains; yellowing fruit contains more sugar and will soften and caramelize instead of giving the starchy crunch tostones require.
