Ingredients

  • 1 large head cauliflower, cut into medium florets
  • 1/2 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • as needed neutral oil spray
  • 1/3 cup Buffalo hot sauce
  • 1 tbsp unsalted butter, melted

Directions

  1. 1Pat the cauliflower completely dry; toss the flour with garlic powder and smoked paprika in a shallow bowl.
  2. 2Coat each floret in seasoned flour, then beaten egg, then panko, pressing crumbs into the crevices.
  3. 3Preheat the air fryer to 390°F (200°C) for 3 minutes and spray the basket lightly with oil.
  4. 4Cook half the cauliflower in one layer for 10–12 minutes, turning the florets after 6 minutes, until crisp and browned.
  5. 5Repeat with the remaining cauliflower; stir Buffalo sauce with melted butter while the second batch cooks.
  6. 6Toss the hot cauliflower lightly with Buffalo sauce and return it to the basket for 2 minutes at 390°F (200°C), without shaking.

💡 Sauce the florets only after the breadcrumb shell is fully crisp; coating them earlier traps moisture and leaves the crust soft.
