  • 1.2 kg (about 2.5 lb) chicken wings, split at joint, tips removed
  • 1 tbsp baking powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • ⅓ cup Frank's RedHot sauce
  • 3 tbsp unsalted butter, melted

Directions

  1. 1Pat wings completely dry with paper towels — this is the key to crispiness.
  2. 2Toss wings with baking powder, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  3. 3Arrange wings in a single layer in the air fryer basket, working in batches if needed.
  4. 4Air fry at 200°C (400°F) for 20 minutes, flipping halfway through.
  5. 5Increase to 205°C (400°F) and cook an additional 5 minutes until skin is deep golden and crackling.
  6. 6Stir together Frank's RedHot and melted butter in a large bowl.
  7. 7Toss hot wings in buffalo sauce and serve immediately with celery sticks and blue cheese dip.
