Ingredients

  • 12 oz fresh green beans, trimmed
  • 1 egg
  • 1 tsp Dijon mustard
  • 3/4 cup panko breadcrumbs
  • 1/3 cup Parmesan cheese, finely grated
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • as needed olive oil spray

Directions

  1. 1Pat the green beans completely dry and whisk the egg with Dijon mustard in a shallow bowl.
  2. 2Combine panko, Parmesan, garlic powder, and black pepper in a second bowl.
  3. 3Coat the beans in egg mixture, then press them into the crumb mixture until lightly covered.
  4. 4Preheat the air fryer to 390°F (200°C) for 3 minutes and spray the basket.
  5. 5Arrange half the panko-coated green beans in one layer and air fry 7–9 minutes; shake after 5 minutes, until crisp and browned.
  6. 6Repeat with the remaining beans and serve while the coating is crisp.

💡 Choose slender beans of similar thickness; very thick beans can stay raw-tasting inside by the time the Parmesan crumb is fully browned.
