Air Fryer Eggplant Fries
Eggplant batons with a seasoned cornmeal-Parmesan crust, air-fried until crisp outside while the centres turn creamy.

Ingredients
- •1 large eggplant, cut into 1/2-inch batons
- •1 tsp kosher salt
- •1/3 cup all-purpose flour
- •1 egg, beaten
- •1/2 cup fine cornmeal
- •1/3 cup Parmesan cheese, finely grated
- •1 tsp dried oregano
- •as needed olive oil spray
Directions
- 1Toss the eggplant batons with salt and rest 10 minutes; blot the released moisture thoroughly with paper towels.
- 2Set out flour, beaten egg, and a third bowl containing cornmeal, Parmesan, and oregano.
- 3Coat each eggplant baton in flour, egg, then cornmeal mixture, pressing gently so the crust adheres.
- 4Preheat the air fryer to 390°F (200°C) for 3 minutes and spray both the basket and coated eggplant.
- 5Air fry half the cornmeal-coated eggplant in one layer for 10–12 minutes, turning after 6 minutes, until crisp and browned.
- 6Repeat with the remaining eggplant batons and serve immediately.
💡 The short salting step is useful here because eggplant fries need a dry exterior; skip it only if the cut surfaces already feel unusually firm and dry.
