Perfectly crispy on the outside and fluffy inside, these homemade fries use just a drizzle of oil and come out restaurant-worthy every single time. They're the ultimate weeknight side that the whole family will request on repeat.

Ingredients

  • 3 large russet potatoes, scrubbed
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp black pepper

Directions

  1. 1Cut potatoes into ¼-inch sticks, keeping them as uniform as possible for even cooking.
  2. 2Soak cut fries in cold water for 20 minutes to remove excess starch, then drain and pat completely dry.
  3. 3Toss dried fries with olive oil, salt, garlic powder, smoked paprika, and pepper.
  4. 4Arrange in a single layer in the air fryer basket — work in two batches if needed.
  5. 5Air fry at 200°C (400°F) for 15–18 minutes, shaking every 5 minutes, until golden and crispy.
  6. 6Season with extra salt immediately and serve with ketchup or aioli.

💡 Soaking in cold water is the non-negotiable step that makes the difference between floppy and crispy. Yukon Gold potatoes work great too and have a naturally buttery flavour.
