Ingredients
- •3 large russet potatoes, scrubbed
- •2 tbsp olive oil
- •1 tsp salt
- •½ tsp garlic powder
- •½ tsp smoked paprika
- •¼ tsp black pepper
Directions
- 1Cut potatoes into ¼-inch sticks, keeping them as uniform as possible for even cooking.
- 2Soak cut fries in cold water for 20 minutes to remove excess starch, then drain and pat completely dry.
- 3Toss dried fries with olive oil, salt, garlic powder, smoked paprika, and pepper.
- 4Arrange in a single layer in the air fryer basket — work in two batches if needed.
- 5Air fry at 200°C (400°F) for 15–18 minutes, shaking every 5 minutes, until golden and crispy.
- 6Season with extra salt immediately and serve with ketchup or aioli.
💡 Soaking in cold water is the non-negotiable step that makes the difference between floppy and crispy. Yukon Gold potatoes work great too and have a naturally buttery flavour.
