Air Fryer Gyoza
Japanese pork-and-cabbage dumplings cooked from fresh with crisp bottoms and tender wrappers, without a skillet steam-fry.

Ingredients
- •24 round gyoza wrappers
- •8 oz ground pork
- •1 cup green cabbage, finely chopped
- •2 green onions, finely sliced
- •1 tsp fresh ginger, grated
- •1 tbsp soy sauce
- •1 tsp toasted sesame oil
- •1 tsp cornstarch
- •as needed neutral oil spray
- •2 tbsp rice vinegar
Directions
- 1Mix pork, cabbage, green onions, ginger, soy sauce, sesame oil, and cornstarch until the filling becomes slightly tacky.
- 2Place 2 teaspoons filling in each gyoza wrapper; moisten the rim with water, fold, pleat, and press firmly to seal.
- 3Preheat the air fryer to 375°F (190°C) for 3 minutes and lightly oil the basket before adding the pork-filled gyoza.
- 4Arrange 12 gyoza flat-side down in one layer, mist the tops with oil, and air fry 8–10 minutes without shaking.
- 5Check after 8 minutes; remove when the wrappers are blistered and the pork filling reaches 160°F (71°C).
- 6Cook the second batch the same way and serve with rice vinegar mixed with a little soy sauce if desired.
💡 Seal the pleated edge firmly and keep filling off the wrapper rim; exposed pork juices can prevent the seam from closing and make dumplings burst.
