Air Fryer Korean Vegetable Mandu
Korean dumplings filled with tofu, cabbage, mushrooms, and glass noodles, air-fried until the pleated wrappers are crisp.

Ingredients
- •24 round mandu or dumpling wrappers
- •7 oz firm tofu, pressed and crumbled
- •1 cup napa cabbage, finely chopped
- •1/2 cup shiitake mushrooms, finely chopped
- •1/2 cup sweet potato glass noodles, cooked and chopped
- •2 green onions, finely sliced
- •1 clove garlic, minced
- •1 tbsp soy sauce
- •2 tsp toasted sesame oil
- •as needed neutral oil spray
Directions
- 1Squeeze chopped cabbage firmly in a towel, then mix with tofu, shiitakes, noodles, green onions, garlic, soy sauce, and sesame oil.
- 2Place 1 tablespoon tofu filling in each dumpling wrapper, moisten the rim, fold into a half-moon, and pleat tightly.
- 3Preheat the air fryer to 370°F (188°C) for 3 minutes and mist the basket before adding the tofu mandu.
- 4Arrange 12 mandu in one layer, spray the tops lightly, and air fry 9–11 minutes without shaking.
- 5Turn the mandu after 6 minutes and continue until both sides are crisp and the wrappers are browned at the edges.
- 6Cook the remaining 12 mandu in a second batch and serve hot.
💡 Squeezing the napa cabbage matters more than adding extra binder; trapped cabbage water makes the filling loose and can soften the wrappers from inside.
