Air Fryer Nigerian Chin Chin

Nigerian bite-size sweet dough squares air-fried in small batches until crisp, with nutmeg and milk giving the familiar snack its rich flavour.

Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1/2 tsp ground nutmeg
  • 1/2 tsp baking powder
  • 1/4 tsp kosher salt
  • 4 tbsp unsalted butter, cold and cubed
  • 1/3 cup whole milk
  • 1 egg
  • as needed neutral oil spray

Directions

  1. 1Mix flour, sugar, nutmeg, baking powder, and salt; rub in the cold butter until the mixture resembles coarse crumbs.
  2. 2Whisk milk with the egg, add to the flour mixture, and knead briefly until a firm, smooth dough forms.
  3. 3Roll the flour dough 1/4 inch thick and cut into 1/2-inch squares; separate the pieces so the cut surfaces do not stick.
  4. 4Preheat the air fryer to 350°F (175°C) for 3 minutes and spray the basket lightly.
  5. 5Air fry one-quarter of the flour-dough squares in one layer for 7–9 minutes; shake at 4 minutes, until golden and dry.
  6. 6Repeat with the remaining flour-dough squares in 3 batches and cool on a rack; the chin chin becomes crisper as it cools.

💡 Do not overcrowd the tiny pieces even though they seem small; chin chin needs room to tumble when shaken or the centres stay pale and soft.
