Ingredients

  • 2 cups dill pickle chips, drained
  • 1/3 cup all-purpose flour
  • 1 egg
  • 1 tsp hot sauce
  • 3/4 cup panko breadcrumbs
  • 1/4 cup fine cornmeal
  • 1/2 tsp dried dill
  • 1/4 tsp black pepper
  • as needed neutral oil spray

Directions

  1. 1Spread the pickle chips on towels and blot both sides until the surfaces feel dry.
  2. 2Place flour in one bowl; whisk egg with hot sauce in a second; mix panko, cornmeal, dill, and pepper in a third.
  3. 3Coat each pickle chip in flour, egg, then crumb mixture, pressing gently so the coating covers the wet edges.
  4. 4Preheat the air fryer to 400°F (205°C) for 3 minutes and spray the basket before adding the breaded dill pickle chips.
  5. 5Arrange half the pickle chips in one layer and air fry 6–8 minutes, turning after 4 minutes, until crisp and golden.
  6. 6Repeat with the remaining pickle chips and serve immediately.

💡 Blotting the pickles is the make-or-break step: brine left on the slices dissolves the flour layer and creates bald spots in the crust.
