Ingredients

  • 1 1/2 lb russet potatoes, peeled and cubed
  • 1/2 cup sharp cheddar cheese, finely grated
  • 2 green onions, finely sliced
  • 1 egg yolk
  • 1/3 cup all-purpose flour
  • 1 egg, beaten
  • 1 cup panko breadcrumbs
  • 1/2 tsp kosher salt
  • as needed neutral oil spray

Directions

  1. 1Boil the potatoes until tender, drain thoroughly, and mash smooth; cool 10 minutes before mixing in cheddar, green onions, egg yolk, and salt.
  2. 2Shape the russet-potato mixture into 12 short cylinders and chill for 30 minutes until firm.
  3. 3Roll each croquette in flour, dip in beaten egg, then coat completely with panko.
  4. 4Preheat the air fryer to 390°F (200°C) for 3 minutes and spray the basket and panko-coated potato croquettes.
  5. 5Air fry 6 russet-potato croquettes in one layer for 9–11 minutes, turning after 6 minutes, until crisp and browned.
  6. 6Repeat with the remaining russet-potato croquettes and rest 2 minutes before serving.

💡 The mashed potatoes must be dry enough to hold a cylinder before chilling; watery potatoes force extra flour into the filling and make the centre heavy.
