Air Fryer Potato Croquettes
Creamy potato croquettes with cheddar and scallion, chilled before breading so they keep a crisp shell and soft centre in the air fryer.

Ingredients
- •1 1/2 lb russet potatoes, peeled and cubed
- •1/2 cup sharp cheddar cheese, finely grated
- •2 green onions, finely sliced
- •1 egg yolk
- •1/3 cup all-purpose flour
- •1 egg, beaten
- •1 cup panko breadcrumbs
- •1/2 tsp kosher salt
- •as needed neutral oil spray
Directions
- 1Boil the potatoes until tender, drain thoroughly, and mash smooth; cool 10 minutes before mixing in cheddar, green onions, egg yolk, and salt.
- 2Shape the russet-potato mixture into 12 short cylinders and chill for 30 minutes until firm.
- 3Roll each croquette in flour, dip in beaten egg, then coat completely with panko.
- 4Preheat the air fryer to 390°F (200°C) for 3 minutes and spray the basket and panko-coated potato croquettes.
- 5Air fry 6 russet-potato croquettes in one layer for 9–11 minutes, turning after 6 minutes, until crisp and browned.
- 6Repeat with the remaining russet-potato croquettes and rest 2 minutes before serving.
💡 The mashed potatoes must be dry enough to hold a cylinder before chilling; watery potatoes force extra flour into the filling and make the centre heavy.
