Ingredients

  • 6 large eggs
  • 1 lb ground pork sausage
  • 1 tsp Dijon mustard
  • 1 tsp fresh sage, finely chopped
  • 1/3 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • as needed neutral oil spray

Directions

  1. 1Boil 4 eggs for 7 minutes, transfer to ice water, peel carefully, and pat dry; leave the remaining 2 eggs raw for breading.
  2. 2Mix sausage with Dijon and sage, divide into 4 portions, and flatten each portion into a thin oval.
  3. 3Wrap each cooked egg completely in sausage, sealing the seams; roll lightly in flour.
  4. 4Beat the remaining 2 eggs; dip each sausage-wrapped egg in beaten egg, then coat with panko seasoned with salt and pepper.
  5. 5Preheat the air fryer to 375°F (190°C) for 3 minutes and lightly spray the Scotch eggs.
  6. 6Air fry all four in one layer for 14–16 minutes, turning after 8 minutes, until the sausage reaches 160°F (71°C).

💡 Chill the peeled eggs before wrapping if they feel fragile; firm cold whites are easier to cover evenly without tearing.
