Air Fryer Scotch Eggs

Ingredients
- •6 large eggs
- •1 lb ground pork sausage
- •1 tsp Dijon mustard
- •1 tsp fresh sage, finely chopped
- •1/3 cup all-purpose flour
- •1 cup panko breadcrumbs
- •1/2 tsp kosher salt
- •1/4 tsp black pepper
- •as needed neutral oil spray
Directions
- 1Boil 4 eggs for 7 minutes, transfer to ice water, peel carefully, and pat dry; leave the remaining 2 eggs raw for breading.
- 2Mix sausage with Dijon and sage, divide into 4 portions, and flatten each portion into a thin oval.
- 3Wrap each cooked egg completely in sausage, sealing the seams; roll lightly in flour.
- 4Beat the remaining 2 eggs; dip each sausage-wrapped egg in beaten egg, then coat with panko seasoned with salt and pepper.
- 5Preheat the air fryer to 375°F (190°C) for 3 minutes and lightly spray the Scotch eggs.
- 6Air fry all four in one layer for 14–16 minutes, turning after 8 minutes, until the sausage reaches 160°F (71°C).
