Ingredients

  • 2 lb fresh yuca, peeled and cut into 3-inch batons
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 3/4 tsp kosher salt
  • 1 tsp lime zest

Directions

  1. 1Boil the yuca in salted water for 12–15 minutes until the outside is tender but the batons still hold together.
  2. 2Drain the yuca, remove any visible fibrous cores, and let the batons steam-dry for 5 minutes.
  3. 3Toss gently with olive oil, garlic powder, oregano, salt, and lime zest.
  4. 4Preheat the air fryer to 400°F (205°C) for 3 minutes before adding the seasoned yuca.
  5. 5Arrange half the seasoned yuca in one layer and air fry 13–15 minutes; shake after 7 minutes, until the edges are crisp and blistered.
  6. 6Repeat with the remaining yuca and serve the fries immediately.

💡 Parboiling is what gives yuca fries a fluffy interior; putting raw cassava straight into the air fryer can leave the centre dense before the outside browns.
