Air Fryer Yuca Fries
Parboiled cassava batons with a fluffy centre and crisp, garlicky exterior finished in the air fryer.

Ingredients
- •2 lb fresh yuca, peeled and cut into 3-inch batons
- •2 tbsp olive oil
- •1 tsp garlic powder
- •1/2 tsp dried oregano
- •3/4 tsp kosher salt
- •1 tsp lime zest
Directions
- 1Boil the yuca in salted water for 12–15 minutes until the outside is tender but the batons still hold together.
- 2Drain the yuca, remove any visible fibrous cores, and let the batons steam-dry for 5 minutes.
- 3Toss gently with olive oil, garlic powder, oregano, salt, and lime zest.
- 4Preheat the air fryer to 400°F (205°C) for 3 minutes before adding the seasoned yuca.
- 5Arrange half the seasoned yuca in one layer and air fry 13–15 minutes; shake after 7 minutes, until the edges are crisp and blistered.
- 6Repeat with the remaining yuca and serve the fries immediately.
💡 Parboiling is what gives yuca fries a fluffy interior; putting raw cassava straight into the air fryer can leave the centre dense before the outside browns.
