Ingredients
- •1 large cucumber, halved lengthwise and thinly sliced

- •1/3 cup rice vinegar
- •3 tbsp granulated sugar
- •2 tbsp water
- •1/2 tsp salt
Directions
- 1Combine rice vinegar, sugar, water, and salt in a small saucepan and heat over medium until the sugar dissolves, about 2 minutes.
- 2Remove the dressing from heat and cool for 5 minutes so it does not soften the cucumber too quickly.
- 3Place cucumber, shallot, and chile in a bowl and pour the cooled dressing over them.
- 4Toss well and let stand 10 minutes before serving.
