Thai cucumber relish with shallot and chile in a sweet-sour vinegar dressing, traditionally served as a cooling counterpoint to grilled and fried foods.

Ingredients

  • 1 large cucumber, halved lengthwise and thinly sliced
  • 1 small shallot, thinly sliced
  • 1 small red chili pepper, thinly sliced
  • 1/3 cup rice vinegar
  • 3 tbsp granulated sugar
  • 2 tbsp water
  • 1/2 tsp salt

Directions

  1. 1Combine rice vinegar, sugar, water, and salt in a small saucepan and heat over medium until the sugar dissolves, about 2 minutes.
  2. 2Remove the dressing from heat and cool for 5 minutes so it does not soften the cucumber too quickly.
  3. 3Place cucumber, shallot, and chile in a bowl and pour the cooled dressing over them.
  4. 4Toss well and let stand 10 minutes before serving.
