Akamu

A creamy and savory cornmeal pudding served with a rich vegetable and meat soup.

Ingredients

  • 2 cups cornmeal (akamu flour)
  • 4 cups water
  • 1 pound beef or chicken, cubed
  • 2 medium onions, diced
  • 3 cloves garlic, minced
  • 2 tablespoons palm oil
  • 2 medium tomatoes, chopped
  • 2 cups spinach or leafy greens, chopped
  • 4 cups beef or vegetable broth
  • 1 teaspoon cayenne pepper
  • 2 teaspoons salt
  • 1 tablespoon butter

Directions

  1. 1Heat palm oil in a large pot over medium-high heat and brown the beef with diced onions and garlic for 5 minutes.
  2. 2Add chopped tomatoes and cook for 3 minutes until softened, then add broth, cayenne pepper, and salt.
  3. 3Simmer the meat and broth for 15 minutes until the meat is tender, then stir in the chopped spinach.
  4. 4In a separate pot, bring 4 cups of water to a boil, then slowly whisk in cornmeal to avoid lumps, stirring constantly.
  5. 5Reduce heat to low and continue stirring the cornmeal mixture for 10-12 minutes until thick and creamy, then stir in butter.
  6. 6Divide the akamu into bowls and ladle the meat and vegetable soup generously over the top, serving hot.
