Akamu
A creamy and savory cornmeal pudding served with a rich vegetable and meat soup.

Ingredients
- •2 cups cornmeal (akamu flour)
- •4 cups water
- •1 pound beef or chicken, cubed
- •2 medium onions, diced
- •3 cloves garlic, minced
- •2 tablespoons palm oil
- •2 medium tomatoes, chopped
- •2 cups spinach or leafy greens, chopped
- •4 cups beef or vegetable broth
- •1 teaspoon cayenne pepper
- •2 teaspoons salt
- •1 tablespoon butter
Directions
- 1Heat palm oil in a large pot over medium-high heat and brown the beef with diced onions and garlic for 5 minutes.
- 2Add chopped tomatoes and cook for 3 minutes until softened, then add broth, cayenne pepper, and salt.
- 3Simmer the meat and broth for 15 minutes until the meat is tender, then stir in the chopped spinach.
- 4In a separate pot, bring 4 cups of water to a boil, then slowly whisk in cornmeal to avoid lumps, stirring constantly.
- 5Reduce heat to low and continue stirring the cornmeal mixture for 10-12 minutes until thick and creamy, then stir in butter.
- 6Divide the akamu into bowls and ladle the meat and vegetable soup generously over the top, serving hot.
