Albondigas en Salsa de Tomate
Tender Spanish meatballs simmered in a rich tomato sauce with garlic and herbs, perfect served over rice or with crusty bread.

Ingredients
- •500g ground beef
- •1/2 cup breadcrumbs
- •1 egg
- •4 cloves garlic, minced
- •1/4 cup fresh parsley, chopped
- •1 teaspoon salt
- •1/2 teaspoon black pepper
- •2 tablespoons olive oil
- •800g canned crushed tomatoes
- •1 tablespoon tomato paste
- •1 teaspoon dried oregano
- •1 cup beef broth
Directions
- 1Combine ground beef, breadcrumbs, egg, half the garlic, parsley, salt, and pepper in a bowl; form into 16-20 meatballs.
- 2Heat olive oil in a large pot over medium-high heat and brown meatballs on all sides, about 8 minutes; remove and set aside.
- 3In the same pot, sauté remaining garlic for 1 minute until fragrant.
- 4Add tomato paste and cook for 1 minute, then stir in crushed tomatoes, oregano, and beef broth.
- 5Return meatballs to the pot and bring sauce to a simmer.
- 6Cook uncovered for 15-18 minutes until meatballs are cooked through and sauce thickens.
- 7Taste and adjust seasonings, then serve hot over rice or with bread.
