Alcapurrias (Puerto Rican Green Banana and Yautía Fritters)
Puerto Rican fritters made from green banana and yautía dough wrapped around seasoned beef.

Ingredients
- •3 green plantains, peeled
- •1 lb yautía, peeled
- •1 lb ground beef
- •1/2 medium yellow onion, finely diced
- •1/3 cup sofrito
- •1/2 cup tomato sauce
- •1 tsp adobo seasoning
- •5 cups vegetable oil for frying
Directions
- 1Grate the green plantains and yautía finely and mix into a smooth starchy masa.
- 2Cook ground beef, onion, sofrito, tomato sauce, and adobo for 10 minutes.
- 3Cool the beef filling for 10 minutes.
- 4Flatten masa on oiled paper, add beef, and fold into an oblong fritter.
- 5Fry at 350°F (175°C) for 5–6 minutes until deeply golden and cooked through.
- 6Drain well and serve hot.
💡 Oil your hands before shaping because the green-banana and yautía masa is naturally sticky.
