Alcapurrias (Puerto Rican Green Banana and Yautía Fritters)

Ingredients

  • 3 green plantains, peeled
  • 1 lb yautía, peeled
  • 1 lb ground beef
  • 1/2 medium yellow onion, finely diced
  • 1/3 cup sofrito
  • 1/2 cup tomato sauce
  • 1 tsp adobo seasoning
  • 5 cups vegetable oil for frying

Directions

  1. 1Grate the green plantains and yautía finely and mix into a smooth starchy masa.
  2. 2Cook ground beef, onion, sofrito, tomato sauce, and adobo for 10 minutes.
  3. 3Cool the beef filling for 10 minutes.
  4. 4Flatten masa on oiled paper, add beef, and fold into an oblong fritter.
  5. 5Fry at 350°F (175°C) for 5–6 minutes until deeply golden and cooked through.
  6. 6Drain well and serve hot.

💡 Oil your hands before shaping because the green-banana and yautía masa is naturally sticky.
