Almond Cake

Ingredients
- •2 cups sliced or blanched almonds
- •6 large eggs, separated
- •3/4 cup sugar
- •1/4 cup all-purpose flour
- •1 teaspoon vanilla extract
- •1/2 teaspoon salt
- •1/2 teaspoon almond extract
- •2 tablespoons butter, softened
- •1/4 teaspoon cream of tartar
- •2 tablespoons powdered sugar
Directions
- 1Preheat oven to 325°F and grease a 9-inch round cake pan. Pulse almonds in a food processor until finely ground, then set aside.
- 2Beat egg yolks with 1/2 cup sugar until pale and thick, about 3 minutes. Stir in vanilla extract, almond extract, and butter until combined.
- 3Fold ground almonds and flour into the egg yolk mixture until just combined.
- 4In a separate bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add remaining 1/4 cup sugar while beating until stiff peaks form.
- 5Gently fold the egg white mixture into the almond mixture in two additions, being careful not to deflate the whites.
- 6Pour batter into prepared pan and smooth the top. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
- 7Allow cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. Dust with powdered sugar before serving.
