Ingredients

  • 2 cups sliced or blanched almonds
  • 6 large eggs, separated
  • 3/4 cup sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon almond extract
  • 2 tablespoons butter, softened
  • 1/4 teaspoon cream of tartar
  • 2 tablespoons powdered sugar

Directions

  1. 1Preheat oven to 325°F and grease a 9-inch round cake pan. Pulse almonds in a food processor until finely ground, then set aside.
  2. 2Beat egg yolks with 1/2 cup sugar until pale and thick, about 3 minutes. Stir in vanilla extract, almond extract, and butter until combined.
  3. 3Fold ground almonds and flour into the egg yolk mixture until just combined.
  4. 4In a separate bowl, beat egg whites with cream of tartar until soft peaks form. Gradually add remaining 1/4 cup sugar while beating until stiff peaks form.
  5. 5Gently fold the egg white mixture into the almond mixture in two additions, being careful not to deflate the whites.
  6. 6Pour batter into prepared pan and smooth the top. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  7. 7Allow cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. Dust with powdered sugar before serving.
