Aloo Gobi

A fragrant and golden Indian potato and cauliflower curry with aromatic spices and tender vegetables.

Ingredients

  • 3 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 medium onion, diced
  • 2 tablespoons ginger-garlic paste
  • 3 medium potatoes, cubed
  • 1 small cauliflower head, cut into florets
  • 2 tablespoons ground coriander
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon red chili powder
  • 1 cup water
  • 1/2 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped

Directions

  1. 1Heat oil in a large pan over medium heat and add cumin seeds; let them sizzle for 30 seconds until fragrant.
  2. 2Add diced onions and cook for 3-4 minutes until golden, then stir in ginger-garlic paste and cook for 1 minute.
  3. 3Add potatoes and cauliflower florets, stirring well to coat with oil.
  4. 4Sprinkle ground coriander, turmeric, cumin, and red chili powder over the vegetables and mix thoroughly.
  5. 5Add water and salt, bring to a boil, then reduce heat and simmer covered for 20-25 minutes until potatoes are tender and cauliflower is cooked through.
  6. 6Stir occasionally and add more water if needed to maintain a slightly dry consistency with some sauce.
  7. 7Garnish with fresh cilantro and serve hot with rice or Indian bread.
