Aloo Gobi
A fragrant and golden Indian potato and cauliflower curry with aromatic spices and tender vegetables.

Ingredients
- •3 tablespoons vegetable oil
- •1 teaspoon cumin seeds
- •1 medium onion, diced
- •2 tablespoons ginger-garlic paste
- •3 medium potatoes, cubed
- •1 small cauliflower head, cut into florets
- •2 tablespoons ground coriander
- •1 tablespoon ground turmeric
- •1 teaspoon ground cumin
- •1 teaspoon red chili powder
- •1 cup water
- •1/2 teaspoon salt
- •2 tablespoons fresh cilantro, chopped
Directions
- 1Heat oil in a large pan over medium heat and add cumin seeds; let them sizzle for 30 seconds until fragrant.
- 2Add diced onions and cook for 3-4 minutes until golden, then stir in ginger-garlic paste and cook for 1 minute.
- 3Add potatoes and cauliflower florets, stirring well to coat with oil.
- 4Sprinkle ground coriander, turmeric, cumin, and red chili powder over the vegetables and mix thoroughly.
- 5Add water and salt, bring to a boil, then reduce heat and simmer covered for 20-25 minutes until potatoes are tender and cauliflower is cooked through.
- 6Stir occasionally and add more water if needed to maintain a slightly dry consistency with some sauce.
- 7Garnish with fresh cilantro and serve hot with rice or Indian bread.
