Aloo Paratha

Ingredients
- •2 cups whole wheat flour
- •3/4 cup warm water
- •1/2 teaspoon salt
- •4 medium potatoes, boiled and mashed
- •1 green chili, finely chopped
- •2 tablespoons fresh cilantro, chopped
- •1/2 teaspoon cumin seeds
- •1/4 teaspoon black pepper
- •4 tablespoons ghee or oil
Directions
- 1Mix flour, salt, and water to form a soft dough. Knead well and let it rest for 20 minutes.
- 2Combine mashed potatoes with green chili, cilantro, cumin seeds, salt, and black pepper in a bowl.
- 3Divide dough into 8 equal portions and roll each into a thin circle.
- 4Place 2 tablespoons of potato filling in the center of each dough circle, fold edges inward, and gently roll into a paratha.
- 5Heat a skillet or griddle over medium-high heat and cook each paratha for 1-2 minutes per side until golden brown spots appear.
- 6Brush with ghee while cooking and flip multiple times to ensure even cooking and flakiness.
- 7Serve hot with yogurt, pickles, or curry of your choice.
