Amritsari Kulcha
Soft, pillowy Indian bread stuffed with spiced potatoes and onions, perfect for lunch or dinner.

Ingredients
- •2 cups all-purpose flour
- •1/2 teaspoon salt
- •1/2 teaspoon baking powder
- •1/4 cup yogurt
- •2 tablespoons oil
- •3 medium potatoes, boiled and mashed
- •1 large onion, finely chopped
- •2 teaspoons cumin seeds
- •1 teaspoon green chili, minced
- •1/2 teaspoon red chili powder
- •1/4 teaspoon black salt
- •2 tablespoons butter, melted
Directions
- 1Mix flour, salt, and baking powder in a bowl. Add yogurt and oil, then knead with warm water until soft dough forms. Cover and let rest for 30 minutes.
- 2Prepare filling: Mix mashed potatoes, chopped onion, cumin seeds, green chili, red chili powder, and black salt in a bowl.
- 3Divide dough into 4 equal portions and roll into balls. Flatten each ball, add 2-3 tablespoons of filling in center, then seal edges and gently flatten into a disc.
- 4Heat a cast iron skillet or tawa over medium-high heat until hot.
- 5Place kulcha on skillet and cook for 2-3 minutes until light brown spots appear, then flip and cook other side for 2-3 minutes.
- 6Brush generously with melted butter on both sides and cook until puffed and golden brown, about 1-2 minutes more.
- 7Serve hot with pickles, yogurt, or curry of choice.
