Apricot Cake
A moist and tender cake bursting with sweet apricot flavor, perfect for afternoon tea or dessert.

Ingredients
- •200g dried apricots, chopped
- •225g butter, softened
- •225g caster sugar
- •4 eggs
- •225g self-raising flour
- •2 tbsp milk
- •1 tsp vanilla extract
- •100g icing sugar
- •2 tbsp apricot jam
Directions
- 1Preheat oven to 180°C and grease a 20cm round cake tin. Pour boiling water over chopped apricots and let soak for 10 minutes, then drain.
- 2Beat butter and caster sugar together until pale and fluffy, then gradually add eggs one at a time, beating well after each addition.
- 3Fold in self-raising flour gently, then stir in milk, vanilla extract, and drained apricots until combined.
- 4Pour batter into prepared tin and bake for 35-40 minutes until a skewer inserted in the center comes out clean.
- 5Cool in tin for 10 minutes, then turn out onto a wire rack to cool completely.
- 6Mix icing sugar with apricot jam and a little water to create a glaze, then drizzle over the cooled cake.
