Apricot Cake

Ingredients

  • 200g dried apricots, chopped
  • 225g butter, softened
  • 225g caster sugar
  • 4 eggs
  • 225g self-raising flour
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 100g icing sugar
  • 2 tbsp apricot jam

Directions

  1. 1Preheat oven to 180°C and grease a 20cm round cake tin. Pour boiling water over chopped apricots and let soak for 10 minutes, then drain.
  2. 2Beat butter and caster sugar together until pale and fluffy, then gradually add eggs one at a time, beating well after each addition.
  3. 3Fold in self-raising flour gently, then stir in milk, vanilla extract, and drained apricots until combined.
  4. 4Pour batter into prepared tin and bake for 35-40 minutes until a skewer inserted in the center comes out clean.
  5. 5Cool in tin for 10 minutes, then turn out onto a wire rack to cool completely.
  6. 6Mix icing sugar with apricot jam and a little water to create a glaze, then drizzle over the cooled cake.
