Ingredients

  • 4 rounds pita bread
  • 1 lb ground beef
  • 1/2 medium yellow onion, finely grated
  • 1 tomato, seeded and finely diced
  • 1/3 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground allspice
  • 1/2 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Directions

  1. 1Combine ground beef, onion, tomato, parsley, garlic, allspice, cumin, salt, and black pepper.
  2. 2Cut each pita into quarters and open each piece carefully into a pocket.
  3. 3Spread a thin layer of beef filling inside each pita quarter, pressing it evenly to the edges.
  4. 4Brush the outsides lightly with olive oil.
  5. 5Cook the stuffed pitas in a covered skillet over medium heat for 3–4 minutes per side.
  6. 6Uncover for the final minute so the pita crisps while the beef finishes cooking.

💡 Keep the meat layer thin; a thick filling leaves the beef undercooked before the pita exterior becomes too dark.
