Arayes (Middle Eastern Meat-Stuffed Pita)

Ingredients
- •4 rounds pita bread
- •1 lb ground beef
- •1/2 medium yellow onion, finely grated
- •1 tomato, seeded and finely diced
- •1/3 cup fresh parsley, chopped
- •2 cloves garlic, minced
- •1 tsp ground allspice
- •1/2 tsp ground cumin
- •1 tsp salt
- •1/2 tsp black pepper
- •2 tbsp olive oil
Directions
- 1Combine ground beef, onion, tomato, parsley, garlic, allspice, cumin, salt, and black pepper.
- 2Cut each pita into quarters and open each piece carefully into a pocket.
- 3Spread a thin layer of beef filling inside each pita quarter, pressing it evenly to the edges.
- 4Brush the outsides lightly with olive oil.
- 5Cook the stuffed pitas in a covered skillet over medium heat for 3–4 minutes per side.
- 6Uncover for the final minute so the pita crisps while the beef finishes cooking.
