Arepa de Huevo (Colombian Egg-Stuffed Arepa)

Colombian Caribbean arepas fried once to puff, opened, filled with a whole egg, sealed, and fried again until crisp.

Ingredients

  • 2 cups precooked white cornmeal
  • 2 1/2 cups warm water
  • 1 tsp salt
  • 6 eggs
  • 4 cups for frying vegetable oil

Directions

  1. 1Mix cornmeal, warm water, and salt into a soft dough and rest it for 5 minutes.
  2. 2Divide into six balls and flatten each into a 5-inch disc about 1/4 inch thick.
  3. 3Fry the discs at 350°F (175°C) for 2–3 minutes until they puff slightly, then drain briefly.
  4. 4Cut a small opening along the edge of each arepa and carefully pour one raw egg inside.
  5. 5Pinch the opening closed with a little reserved dough, smoothing the seam with damp fingers.
  6. 6Return the stuffed arepas to the oil and fry 3–4 minutes until crisp and the egg is set.

💡 The first fry must puff the arepa enough to create a pocket; if it stays flat, the egg will not fit without tearing it.
