Arepitas de Yuca (Dominican Cassava Fritters)

Dominican cassava fritters scented with anise and lightly sweetened, fried until crisp outside and tender within.

Ingredients

  • 1 1/2 lb cassava, peeled and finely grated
  • 1 egg
  • 2 tbsp granulated sugar
  • 1 tsp anise seed
  • 1/2 tsp salt
  • 1 tbsp unsalted butter, melted
  • 3 cups vegetable oil for frying

Directions

  1. 1Squeeze the grated cassava lightly in a clean towel to remove excess moisture.
  2. 2Mix cassava, egg, sugar, anise seed, salt, and melted butter until evenly combined.
  3. 3Shape the mixture into small flattened ovals using damp hands.
  4. 4Heat vegetable oil to 350°F (175°C) in a deep pot.
  5. 5Fry the arepitas in batches for 3–4 minutes per side until deeply golden.
  6. 6Drain on paper towel and serve warm.

💡 Remove only excess liquid from the cassava; squeezing it completely dry makes the fritters crumbly instead of tender.
