Arepitas de Yuca (Dominican Cassava Fritters)
Dominican cassava fritters scented with anise and lightly sweetened, fried until crisp outside and tender within.

Ingredients
- •1 1/2 lb cassava, peeled and finely grated
- •1 egg
- •2 tbsp granulated sugar
- •1 tsp anise seed
- •1/2 tsp salt
- •1 tbsp unsalted butter, melted
- •3 cups vegetable oil for frying
Directions
- 1Squeeze the grated cassava lightly in a clean towel to remove excess moisture.
- 2Mix cassava, egg, sugar, anise seed, salt, and melted butter until evenly combined.
- 3Shape the mixture into small flattened ovals using damp hands.
- 4Heat vegetable oil to 350°F (175°C) in a deep pot.
- 5Fry the arepitas in batches for 3–4 minutes per side until deeply golden.
- 6Drain on paper towel and serve warm.
💡 Remove only excess liquid from the cassava; squeezing it completely dry makes the fritters crumbly instead of tender.
