Arroz Carreteiro (Brazilian Cowboy Rice with Beef and Vegetables)
A hearty one-pan rice dish from southern Brazil, traditionally made by cattle drovers with dried beef, tomato, and vegetables all cooked together until the rice is fragrant and flavorful. It is the ultimate fridge-clearing weeknight dinner.

Ingredients
- •400 g ground beef or diced sirloin
- •1.5 cups long-grain white rice, rinsed
- •1 yellow onion, diced
- •4 garlic cloves, minced
- •2 Roma tomatoes, diced
- •1 green bell pepper, diced
- •2.5 cups vegetable or beef broth
- •1 tsp smoked paprika
- •1/2 tsp ground cumin
- •2 tbsp vegetable oil
- •to taste salt and black pepper
- •3 tbsp fresh parsley or scallions, chopped (for garnish)
Directions
- 1Heat oil in a large, deep skillet or Dutch oven over high heat; add beef and cook, breaking up, until browned and any liquid evaporates, about 6 minutes.
- 2Add onion and bell pepper; cook over medium-high heat until softened, about 4 minutes.
- 3Stir in garlic, smoked paprika, and cumin; cook 1 minute until fragrant.
- 4Add diced tomatoes and cook, stirring, until they break down slightly, about 3 minutes.
- 5Add rinsed rice and stir to coat in the meat and tomato mixture for 1 minute.
- 6Pour in broth, season well with salt and pepper, and bring to a boil.
- 7Reduce heat to low, cover tightly, and cook until rice has absorbed all liquid, about 18 minutes.
- 8Remove from heat and let steam, covered, for 5 minutes; fluff with a fork.
- 9Scatter parsley or scallions over the top and serve directly from the pan.
💡 Traditional arroz carreteiro is made with carne seca (Brazilian salted dried beef), which gives a deeply savory, almost funky flavor. Substitute corned beef or well-seasoned ground beef, which are easy to find at any Canadian grocery store. If using corned beef, dice it and skip the browning step.
