Artichoke and Spinach Panini
A warm, melty pressed sandwich filled with creamy spinach, tender artichokes, and gooey cheese.

Ingredients
- •4 slices ciabatta or panini bread
- •2 cups fresh spinach
- •1 cup canned or frozen artichoke hearts, chopped
- •1/2 cup ricotta cheese
- •1 cup mozzarella cheese, shredded
- •2 cloves garlic, minced
- •2 tablespoons olive oil
- •1/4 teaspoon salt and pepper
- •2 tablespoons butter, softened
Directions
- 1Heat 1 tablespoon olive oil in a skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
- 2Add fresh spinach and chopped artichoke hearts, cooking for 3-4 minutes until spinach wilts. Stir in ricotta cheese, salt, and pepper. Remove from heat.
- 3Spread softened butter on the outside of each bread slice. Spread ricotta mixture on the inside of two slices, then top with shredded mozzarella and the remaining bread slices.
- 4Heat a panini press or skillet over medium-high heat. Cook sandwiches for 3-4 minutes until golden and cheese melts, pressing gently if using a skillet.
