Artichoke and Spinach Panini

A warm, melty pressed sandwich filled with creamy spinach, tender artichokes, and gooey cheese.

Ingredients

  • 4 slices ciabatta or panini bread
  • 2 cups fresh spinach
  • 1 cup canned or frozen artichoke hearts, chopped
  • 1/2 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt and pepper
  • 2 tablespoons butter, softened

Directions

  1. 1Heat 1 tablespoon olive oil in a skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant.
  2. 2Add fresh spinach and chopped artichoke hearts, cooking for 3-4 minutes until spinach wilts. Stir in ricotta cheese, salt, and pepper. Remove from heat.
  3. 3Spread softened butter on the outside of each bread slice. Spread ricotta mixture on the inside of two slices, then top with shredded mozzarella and the remaining bread slices.
  4. 4Heat a panini press or skillet over medium-high heat. Cook sandwiches for 3-4 minutes until golden and cheese melts, pressing gently if using a skillet.
