Asparagus Frittata

Ingredients
- •1 pound fresh asparagus, trimmed and cut into 2-inch pieces
- •8 large eggs
- •1/4 cup whole milk
- •1/2 cup grated Parmesan cheese
- •2 tablespoons butter
- •1/2 cup diced onion
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •1/4 teaspoon garlic powder
Directions
- 1Preheat oven to 375°F. In a 10-inch ovenproof skillet, melt butter over medium heat and sauté onions until softened, about 2 minutes.
- 2Add asparagus pieces to the skillet and cook for 4-5 minutes, stirring occasionally, until just tender.
- 3In a bowl, whisk together eggs, milk, Parmesan cheese, salt, pepper, and garlic powder until well combined.
- 4Pour the egg mixture over the asparagus in the skillet, stirring gently to distribute evenly. Cook on the stovetop for 2-3 minutes until edges begin to set.
- 5Transfer the skillet to the preheated oven and bake for 10-12 minutes until the center is set and the top is lightly golden.
- 6Remove from oven, let cool for 2 minutes, then slide onto a cutting board, slice into wedges, and serve warm.
