Asparagus Frittata

Ingredients

  • 1 pound fresh asparagus, trimmed and cut into 2-inch pieces
  • 8 large eggs
  • 1/4 cup whole milk
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1/2 cup diced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Directions

  1. 1Preheat oven to 375°F. In a 10-inch ovenproof skillet, melt butter over medium heat and sauté onions until softened, about 2 minutes.
  2. 2Add asparagus pieces to the skillet and cook for 4-5 minutes, stirring occasionally, until just tender.
  3. 3In a bowl, whisk together eggs, milk, Parmesan cheese, salt, pepper, and garlic powder until well combined.
  4. 4Pour the egg mixture over the asparagus in the skillet, stirring gently to distribute evenly. Cook on the stovetop for 2-3 minutes until edges begin to set.
  5. 5Transfer the skillet to the preheated oven and bake for 10-12 minutes until the center is set and the top is lightly golden.
  6. 6Remove from oven, let cool for 2 minutes, then slide onto a cutting board, slice into wedges, and serve warm.
