Ingredients

  • 1 1/2 cups fine semolina
  • 4 cups water
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1/2 cup pitted dates, chopped
  • 1/2 tsp ground cinnamon

Directions

  1. 1Bring the water and salt to a steady simmer in a heavy saucepan.
  2. 2Whisk in the fine semolina gradually so no dry pockets form.
  3. 3Cook over low heat for 8–10 minutes, stirring constantly, until thick and smooth.
  4. 4Stir in the olive oil and continue cooking for 1 minute.
  5. 5Spoon the assida into bowls and scatter the chopped dates over the top.
  6. 6Finish with cinnamon and serve warm.

💡 Add the semolina in a slow stream while whisking; dumping it in all at once creates stubborn lumps.
