Ingredients
- •1 1/2 cups fine semolina
- •4 cups water
- •1/2 tsp salt
- •2 tbsp olive oil
- •1/2 cup pitted dates, chopped
- •1/2 tsp ground cinnamon
Directions
- 1Bring the water and salt to a steady simmer in a heavy saucepan.
- 2Whisk in the fine semolina gradually so no dry pockets form.
- 3Cook over low heat for 8–10 minutes, stirring constantly, until thick and smooth.
- 4Stir in the olive oil and continue cooking for 1 minute.
- 5Spoon the assida into bowls and scatter the chopped dates over the top.
- 6Finish with cinnamon and serve warm.
