Atakilt Wat (Ethiopian Cabbage Potato Carrot Stew)
Cabbage, potato and carrot stewed with turmeric until everything softens together, the Ethiopian fasting plate's backbone.

Ingredients
- •500 g cabbage, chopped
- •400 g potatoes, cubed
- •2 carrots, sliced
- •1 small onion, chopped
- •1/2 tsp turmeric
- •2 tbsp neutral oil
Directions
- 1Cook the onion in the oil over medium-low heat for eight minutes until soft and golden.
- 2Stir in the turmeric and cook one minute so it loses its raw edge.
- 3Add the carrots and potatoes with a good pinch of salt and stir five minutes to coat.
- 4Pile the cabbage on top and add a splash of water.
- 5Cover and cook twenty minutes, stirring once, until everything is fully tender.
- 6Uncover, cook off any liquid, and check the seasoning before serving.
💡 Turmeric and oil only. Atakilt wat is the mild dish on an Ethiopian plate, so resist adding berbere to it.
