Atakilt Wat (Ethiopian Cabbage Potato Carrot Stew)

Cabbage, potato and carrot stewed with turmeric until everything softens together, the Ethiopian fasting plate's backbone.

Ingredients

  • 500 g cabbage, chopped
  • 400 g potatoes, cubed
  • 2 carrots, sliced
  • 1 small onion, chopped
  • 1/2 tsp turmeric
  • 2 tbsp neutral oil

Directions

  1. 1Cook the onion in the oil over medium-low heat for eight minutes until soft and golden.
  2. 2Stir in the turmeric and cook one minute so it loses its raw edge.
  3. 3Add the carrots and potatoes with a good pinch of salt and stir five minutes to coat.
  4. 4Pile the cabbage on top and add a splash of water.
  5. 5Cover and cook twenty minutes, stirring once, until everything is fully tender.
  6. 6Uncover, cook off any liquid, and check the seasoning before serving.

💡 Turmeric and oil only. Atakilt wat is the mild dish on an Ethiopian plate, so resist adding berbere to it.
