Atole de Avena (Mexican Oat Drink)

Ingredients
- •1 cup rolled oats
- •4 cups whole milk
- •2 cups water
- •1/3 cup piloncillo, grated
- •1 cinnamon stick
- •1 tsp vanilla extract
- •1 pinch salt
Directions
- 1Blend oats with 1 cup milk and 1 cup water until very smooth.
- 2Pour the oat mixture into a saucepan with remaining milk, remaining water, cinnamon stick, and piloncillo.
- 3Cook over medium-low heat for 10–12 minutes, whisking often as the drink thickens.
- 4Reduce heat if the mixture begins bubbling vigorously or sticking to the bottom.
- 5Remove the cinnamon stick and stir in vanilla and salt.
- 6Serve hot, thinning with a splash of milk if it thickens more than you prefer.
💡 Whisk frequently once the oats heat up; their starch thickens quickly and can scorch on the bottom of the pot.
