Attiéké (Ivorian Cassava Couscous)

Ingredients
- •3 cups attiéké
- •1 1/2 cups water
- •2 tbsp olive oil
- •3/4 tsp salt
- •2 tbsp fresh lemon juice
Directions
- 1Fluff the attiéké into a heatproof bowl, breaking up any compact clumps.
- 2Sprinkle with water and cover tightly.
- 3Steam over simmering water for 10 minutes.
- 4Transfer to a wide bowl and fluff with a fork.
- 5Toss with olive oil, salt, and lemon juice.
- 6Serve warm or room temperature.
