Attiéké (Ivorian Cassava Couscous)

Ivorian fermented cassava granules steamed until fluffy and finished simply for serving beside grilled foods.

Ingredients

  • 3 cups attiéké
  • 1 1/2 cups water
  • 2 tbsp olive oil
  • 3/4 tsp salt
  • 2 tbsp fresh lemon juice

Directions

  1. 1Fluff the attiéké into a heatproof bowl, breaking up any compact clumps.
  2. 2Sprinkle with water and cover tightly.
  3. 3Steam over simmering water for 10 minutes.
  4. 4Transfer to a wide bowl and fluff with a fork.
  5. 5Toss with olive oil, salt, and lemon juice.
  6. 6Serve warm or room temperature.

💡 Fluff the attiéké both before and after steaming so the granules stay separate.
