Azifa (Ethiopian Lentil Salad)
Cooked green lentils dressed sharply with mustard, lemon and green chili, eaten cold during fasting.

Ingredients
- •300 g green lentils, cooked
- •1 small onion, finely chopped
- •2 tbsp lemon juice
- •1 tbsp Dijon mustard
- •1 green chilies, minced
Directions
- 1Make sure the cooked lentils are completely cold and well drained.
- 2Chop the onion very finely and rinse it briefly under cold water to soften its bite.
- 3Whisk the lemon juice with the Dijon mustard until it thickens slightly.
- 4Combine the lentils, onion and minced green chili in a bowl.
- 5Fold the dressing through and season generously with salt.
- 6Rest twenty minutes before serving so the lentils take up the dressing.
💡 Azifa wants far more salt and lemon than seems right while you are mixing it. Cold lentils flatten seasoning badly.
