Azifa (Ethiopian Lentil Salad)

Cooked green lentils dressed sharply with mustard, lemon and green chili, eaten cold during fasting.

Ingredients

  • 300 g green lentils, cooked
  • 1 small onion, finely chopped
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 green chilies, minced

Directions

  1. 1Make sure the cooked lentils are completely cold and well drained.
  2. 2Chop the onion very finely and rinse it briefly under cold water to soften its bite.
  3. 3Whisk the lemon juice with the Dijon mustard until it thickens slightly.
  4. 4Combine the lentils, onion and minced green chili in a bowl.
  5. 5Fold the dressing through and season generously with salt.
  6. 6Rest twenty minutes before serving so the lentils take up the dressing.

💡 Azifa wants far more salt and lemon than seems right while you are mixing it. Cold lentils flatten seasoning badly.
