Bánh Bột Chiên (Vietnamese Fried Rice Cakes)

Cubes of rice cake fried until crusted, then bound with egg and finished with a sharp soy and vinegar dressing.

Ingredients

  • 400 g rice cakes
  • 4 eggs
  • 4 green onions, sliced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tbsp neutral oil

Directions

  1. 1Cut the rice cakes into thick cubes and pat them dry.
  2. 2Heat the oil in a wide pan and add the cubes in one layer.
  3. 3Fry six minutes without moving them, then turn once, until a hard crust forms on two sides.
  4. 4Beat the eggs and pour them around the cubes.
  5. 5Cook three minutes until the egg sets into a sheet holding everything together.
  6. 6Mix the soy sauce and rice vinegar, pour over, scatter the green onions and serve.

💡 Leave the cubes alone for the full six minutes. Moving them early tears the crust off and they turn to paste.
