Bánh Bột Chiên (Vietnamese Fried Rice Cakes)
Cubes of rice cake fried until crusted, then bound with egg and finished with a sharp soy and vinegar dressing.

Ingredients
- •400 g rice cakes
- •4 eggs
- •4 green onions, sliced
- •2 tbsp soy sauce
- •1 tbsp rice vinegar
- •2 tbsp neutral oil
Directions
- 1Cut the rice cakes into thick cubes and pat them dry.
- 2Heat the oil in a wide pan and add the cubes in one layer.
- 3Fry six minutes without moving them, then turn once, until a hard crust forms on two sides.
- 4Beat the eggs and pour them around the cubes.
- 5Cook three minutes until the egg sets into a sheet holding everything together.
- 6Mix the soy sauce and rice vinegar, pour over, scatter the green onions and serve.
💡 Leave the cubes alone for the full six minutes. Moving them early tears the crust off and they turn to paste.
