Ingredients
- •4 Vietnamese-style baguettes
- •8 eggs
- •1 tbsp vegetable oil
- •1 carrot, julienned
- •1 cup daikon radish, julienned
- •3 tbsp rice vinegar
- •1 tbsp granulated sugar
- •1 cucumber, sliced
- •1 cup fresh cilantro
- •2 tbsp soy sauce
Directions
- 1Mix carrot, daikon, rice vinegar, and sugar and let the quick pickles stand for 10 minutes.
- 2Split the baguettes and warm them briefly.
- 3Fry the eggs in vegetable oil until the whites are set and yolks remain soft.
- 4Drain the quick pickles.
- 5Fill each baguette with two fried eggs, pickles, cucumber, and cilantro.
- 6Drizzle lightly with soy sauce and serve immediately.
