Ingredients

  • 4 Vietnamese-style baguettes
  • 8 eggs
  • 1 tbsp vegetable oil
  • 1 carrot, julienned
  • 1 cup daikon radish, julienned
  • 3 tbsp rice vinegar
  • 1 tbsp granulated sugar
  • 1 cucumber, sliced
  • 1 cup fresh cilantro
  • 2 tbsp soy sauce

Directions

  1. 1Mix carrot, daikon, rice vinegar, and sugar and let the quick pickles stand for 10 minutes.
  2. 2Split the baguettes and warm them briefly.
  3. 3Fry the eggs in vegetable oil until the whites are set and yolks remain soft.
  4. 4Drain the quick pickles.
  5. 5Fill each baguette with two fried eggs, pickles, cucumber, and cilantro.
  6. 6Drizzle lightly with soy sauce and serve immediately.
