Bánh Tráng Trộn (Vietnamese Rice Paper Salad Snack)

Scissored rice paper tossed with green mango, dried shrimp and chili oil until it softens into a chewy, sour, savoury tangle.

Ingredients

  • 10 rice paper sheets, cut into strips
  • 2 green mangoes, julienned
  • 3 quail eggs, hard-boiled and halved
  • 2 tbsp dried shrimp
  • 2 tbsp roasted peanuts
  • 2 tbsp fried shallots
  • 2 tbsp chili oil
  • 2 tbsp lime juice

Directions

  1. 1Stack the rice paper sheets and cut them into strips about a centimetre wide.
  2. 2Soak the dried shrimp in warm water for five minutes, then drain and pat dry.
  3. 3Put the strips in a large bowl and add the lime juice and chili oil.
  4. 4Toss with your hands for a full minute until the strips turn pliable and slightly sticky.
  5. 5Add the green mango, shrimp, peanuts and fried shallots and toss again.
  6. 6Top with the halved quail eggs and eat immediately.

💡 Dress the rice paper before anything else goes in. It needs that minute alone with the liquid to soften without turning to paste.
