Bánh Tráng Trộn (Vietnamese Rice Paper Salad Snack)
Scissored rice paper tossed with green mango, dried shrimp and chili oil until it softens into a chewy, sour, savoury tangle.

Ingredients
- •10 rice paper sheets, cut into strips
- •2 green mangoes, julienned
- •3 quail eggs, hard-boiled and halved
- •2 tbsp dried shrimp
- •2 tbsp roasted peanuts
- •2 tbsp fried shallots
- •2 tbsp chili oil
- •2 tbsp lime juice
Directions
- 1Stack the rice paper sheets and cut them into strips about a centimetre wide.
- 2Soak the dried shrimp in warm water for five minutes, then drain and pat dry.
- 3Put the strips in a large bowl and add the lime juice and chili oil.
- 4Toss with your hands for a full minute until the strips turn pliable and slightly sticky.
- 5Add the green mango, shrimp, peanuts and fried shallots and toss again.
- 6Top with the halved quail eggs and eat immediately.
💡 Dress the rice paper before anything else goes in. It needs that minute alone with the liquid to soften without turning to paste.
