Ingredients

  • 12 oz salt cod
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 1 1/4 cups warm water
  • 4 cups vegetable oil for frying
  • 1 large tomato, diced
  • 1/2 medium red onion, thinly sliced
  • 3 green onions, sliced
  • 1/2 Scotch bonnet pepper, minced
  • 1 tbsp fresh lime juice

Directions

  1. 1Soak the salt cod in cold water for 12 hours, changing the water twice.
  2. 2Mix flour, baking powder, sugar, salt, and warm water into a soft dough and rest it for 20 minutes.
  3. 3Drain the salt cod, simmer it in fresh water for 10 minutes, then flake it.
  4. 4Sauté tomato, red onion, green onions, Scotch bonnet, and salt cod for 6 minutes; finish with lime.
  5. 5Divide the dough into eight rounds and fry at 350°F (175°C) until puffed and golden.
  6. 6Split the fried bakes and fill each with the warm saltfish mixture.

💡 Keep the bake dough soft and lightly handled; a stiff dough produces heavy bread instead of the hollow, tender centre needed for filling.
