Bake and Saltfish (Trinidadian Fried Bread Breakfast Sandwich)

Ingredients
- •12 oz salt cod
- •3 cups all-purpose flour
- •2 tsp baking powder
- •1 tsp salt
- •1 tbsp granulated sugar
- •1 1/4 cups warm water
- •4 cups vegetable oil for frying
- •1 large tomato, diced
- •1/2 medium red onion, thinly sliced
- •3 green onions, sliced
- •1/2 Scotch bonnet pepper, minced
- •1 tbsp fresh lime juice
Directions
- 1Soak the salt cod in cold water for 12 hours, changing the water twice.
- 2Mix flour, baking powder, sugar, salt, and warm water into a soft dough and rest it for 20 minutes.
- 3Drain the salt cod, simmer it in fresh water for 10 minutes, then flake it.
- 4Sauté tomato, red onion, green onions, Scotch bonnet, and salt cod for 6 minutes; finish with lime.
- 5Divide the dough into eight rounds and fry at 350°F (175°C) until puffed and golden.
- 6Split the fried bakes and fill each with the warm saltfish mixture.
💡 Keep the bake dough soft and lightly handled; a stiff dough produces heavy bread instead of the hollow, tender centre needed for filling.
