Ingredients

  • 2 cans (15 oz each) navy beans, drained and rinsed
  • 1 cup diced onion
  • 1/2 cup ketchup
  • 3 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 8 oz tofu sausages, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. 1Preheat oven to 375°F. Heat olive oil in a large skillet over medium-high heat.
  2. 2Pan-fry tofu sausage slices for 3-4 minutes per side until golden brown, then set aside.
  3. 3In the same skillet, sauté diced onion for 3 minutes until softened.
  4. 4Add beans to the skillet along with ketchup, brown sugar, vinegar, mustard, and Worcestershire sauce; stir to combine.
  5. 5Return sausage slices to the skillet, season with salt and pepper, and mix gently.
  6. 6Transfer the mixture to a baking dish and bake for 20-25 minutes until bubbly around the edges.
  7. 7Let cool for 5 minutes before serving.
