Baked Cod with Herbs and Roasted Brussels Sprouts

Flaky white fish seasoned with fresh herbs and lemon, paired with crispy caramelized Brussels sprouts for a light and elegant weeknight dinner.

Ingredients

  • 4 fillets (6 oz each) cod
  • 1 lb Brussels sprouts
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 lemon
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Directions

  1. 1Preheat oven to 400°F. Trim Brussels sprouts, halve them, and toss with 2 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 20 minutes until golden.
  2. 2Place cod fillets on a separate baking sheet lined with parchment paper.
  3. 3Mix remaining 1 tbsp olive oil with minced garlic, parsley, dill, salt, pepper, and paprika.
  4. 4Spread herb mixture over each cod fillet and squeeze fresh lemon juice on top.
  5. 5After Brussels sprouts have roasted 20 minutes, add the baking sheet with cod to the oven for 12-15 minutes until fish is opaque and flakes easily.
  6. 6Serve cod and Brussels sprouts immediately with lemon wedges on the side.
