Baked Cod with Herbs and Roasted Brussels Sprouts

Ingredients
- •4 fillets (6 oz each) cod
- •1 lb Brussels sprouts
- •3 tbsp olive oil
- •2 cloves garlic, minced
- •1 tbsp fresh parsley, chopped
- •1 tbsp fresh dill, chopped
- •1 lemon
- •1 tsp sea salt
- •1/2 tsp black pepper
- •1/2 tsp paprika
Directions
- 1Preheat oven to 400°F. Trim Brussels sprouts, halve them, and toss with 2 tbsp olive oil, salt, and pepper on a baking sheet. Roast for 20 minutes until golden.
- 2Place cod fillets on a separate baking sheet lined with parchment paper.
- 3Mix remaining 1 tbsp olive oil with minced garlic, parsley, dill, salt, pepper, and paprika.
- 4Spread herb mixture over each cod fillet and squeeze fresh lemon juice on top.
- 5After Brussels sprouts have roasted 20 minutes, add the baking sheet with cod to the oven for 12-15 minutes until fish is opaque and flakes easily.
- 6Serve cod and Brussels sprouts immediately with lemon wedges on the side.
