Baked Cod with Tomatoes and Olives

Ingredients

  • 4 fillets (6 oz each) cod fish
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup kalamata olives, pitted
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • to taste salt and black pepper
  • 1/2 lemon

Directions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Heat olive oil in a large skillet over medium heat and sauté minced garlic for 1 minute until fragrant.
  3. 3Add diced tomatoes, olives, oregano, salt, and pepper to the skillet and simmer for 5 minutes.
  4. 4Transfer the tomato-olive mixture to a baking dish and arrange cod fillets on top.
  5. 5Bake for 12-15 minutes until the cod is opaque and flakes easily with a fork.
  6. 6Remove from oven, squeeze fresh lemon juice over the fish, and garnish with fresh parsley before serving.
