Baked Cod with Tomatoes and Olives
Flaky white fish baked in a vibrant Mediterranean sauce of fresh tomatoes, briny olives, and aromatic garlic.

Ingredients
- •4 fillets (6 oz each) cod fish
- •1 can (14.5 oz) diced tomatoes
- •1 cup kalamata olives, pitted
- •4 cloves garlic, minced
- •1/4 cup olive oil
- •1/4 cup fresh parsley, chopped
- •1 teaspoon dried oregano
- •to taste salt and black pepper
- •1/2 lemon
Directions
- 1Preheat oven to 400°F (200°C).
- 2Heat olive oil in a large skillet over medium heat and sauté minced garlic for 1 minute until fragrant.
- 3Add diced tomatoes, olives, oregano, salt, and pepper to the skillet and simmer for 5 minutes.
- 4Transfer the tomato-olive mixture to a baking dish and arrange cod fillets on top.
- 5Bake for 12-15 minutes until the cod is opaque and flakes easily with a fork.
- 6Remove from oven, squeeze fresh lemon juice over the fish, and garnish with fresh parsley before serving.
