Baked Cod with White Wine and Vegetables

Tender flaky cod fillets poached in white wine with fresh vegetables for an elegant, restaurant-quality weeknight dinner.

Ingredients

  • 4 cod fillets (6 oz each)
  • 1 cup dry white wine
  • 2 medium zucchini, sliced
  • 2 medium carrots, sliced
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 cup fish or vegetable broth
  • 2 tbsp fresh lemon juice
  • to taste salt and black pepper
  • 2 tbsp fresh parsley, chopped

Directions

  1. 1Preheat oven to 400°F. Melt butter in a large baking dish and add minced garlic, cooking for 1 minute until fragrant.
  2. 2Arrange sliced zucchini, carrots, and mushrooms in the baking dish, season with salt and pepper, and roast for 10 minutes.
  3. 3Place cod fillets on top of the vegetables and pour white wine and broth around the fish. Drizzle with lemon juice.
  4. 4Cover the baking dish with foil and bake for 12-15 minutes until cod is opaque and flakes easily with a fork.
  5. 5Remove foil, garnish with fresh parsley, and serve immediately in shallow bowls with the cooking liquid spooned over top.
