Baked Cod with White Wine and Vegetables
Tender flaky cod fillets poached in white wine with fresh vegetables for an elegant, restaurant-quality weeknight dinner.

Ingredients
- •4 cod fillets (6 oz each)
- •1 cup dry white wine
- •2 medium zucchini, sliced
- •2 medium carrots, sliced
- •8 oz mushrooms, sliced
- •2 cloves garlic, minced
- •2 tbsp butter
- •1 cup fish or vegetable broth
- •2 tbsp fresh lemon juice
- •to taste salt and black pepper
- •2 tbsp fresh parsley, chopped
Directions
- 1Preheat oven to 400°F. Melt butter in a large baking dish and add minced garlic, cooking for 1 minute until fragrant.
- 2Arrange sliced zucchini, carrots, and mushrooms in the baking dish, season with salt and pepper, and roast for 10 minutes.
- 3Place cod fillets on top of the vegetables and pour white wine and broth around the fish. Drizzle with lemon juice.
- 4Cover the baking dish with foil and bake for 12-15 minutes until cod is opaque and flakes easily with a fork.
- 5Remove foil, garnish with fresh parsley, and serve immediately in shallow bowls with the cooking liquid spooned over top.
