Baked Cottage Cheese Egg Bites

Ingredients
- •4 large eggs
- •½ cup (125 ml) full-fat cottage cheese (2% or 4%)
- •¼ cup (25 g) shredded old cheddar cheese
- •¼ tsp salt
- •⅛ tsp black pepper
- •⅛ tsp garlic powder
- •as needed cooking spray or softened butter (for greasing)
- •2 tbsp cooked bacon or ham, finely chopped (optional mix-in)
- •2 tbsp diced roasted red pepper or baby spinach, finely chopped (optional mix-in)
Directions
- 1Preheat your oven to 325°F (163°C) and generously grease a standard 6-cup muffin tin with cooking spray or butter — get the sides well coated so the bites release cleanly.
- 2Add eggs, cottage cheese, cheddar, salt, pepper, and garlic powder to a blender or use an immersion blender in a tall cup; blend on high for 30–45 seconds until completely smooth and slightly frothy.
- 3Divide any optional mix-ins (bacon, ham, peppers, spinach) evenly among the greased muffin cups.
- 4Pour the blended egg mixture over the mix-ins, filling each cup about ¾ full — you should fill roughly 5–6 cups from this batch.
- 5Place the muffin tin in the oven and bake for 22–26 minutes, until the centres are just set and no longer jiggle when the pan is gently shaken. They will puff up in the oven then settle as they cool — that is normal.
- 6Let the egg bites cool in the tin for 5 minutes, then run a thin spatula or butter knife around the edge of each cup and lift them out gently.
- 7Serve immediately, or refrigerate in an airtight container for up to 4 days and reheat in the microwave for 30–45 seconds straight from the fridge.
💡 For the creamiest, most custard-like texture, do not skip blending — it incorporates the cottage cheese curds fully and aerates the eggs. No blender? A food processor or a very vigorous whisk works in a pinch, though the texture will be slightly less silky. To mimic the sous-vide steam environment, place a second muffin tin or a small oven-safe pan of hot water on the rack below to add humidity to the oven. Silicone muffin pans release the bites even more easily than metal and are widely available at Canadian Tire, Walmart, or any grocery store kitchen aisle.
