Baked Halibut with Lemon and Green Beans

Ingredients

  • 4 halibut fillets (6 oz each)
  • 1 lb fresh green beans, trimmed
  • 3 tbsp olive oil
  • 2 lemons
  • 4 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • 2 tbsp butter

Directions

  1. 1Preheat oven to 400°F. Arrange green beans on a large baking sheet and toss with 1 tbsp olive oil, salt, and pepper.
  2. 2Roast green beans for 10 minutes until they begin to soften.
  3. 3Push green beans to the sides of the sheet. Place halibut fillets in the center and drizzle with remaining olive oil. Season with salt, pepper, and oregano.
  4. 4Top each fillet with minced garlic, a pat of butter, and thin lemon slices. Squeeze fresh lemon juice over everything.
  5. 5Bake for 12-15 minutes until halibut is opaque and flakes easily with a fork.
  6. 6Serve immediately with fresh lemon wedges and pan juices drizzled over the fish and green beans.
