Ingredients

  • 1 pound elbow macaroni
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup gruyere cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup panko breadcrumbs
  • 2 tablespoons melted butter

Directions

  1. 1Preheat oven to 350°F. Cook macaroni according to package directions, drain, and set aside.
  2. 2Melt 4 tablespoons butter in a large saucepan, whisk in flour to create a roux, and cook for 1 minute while stirring constantly.
  3. 3Gradually add milk while whisking to avoid lumps, then cook until the sauce thickens, about 5 minutes.
  4. 4Remove from heat and stir in cheddar, gruyere, and parmesan cheeses until melted and smooth. Season with salt, pepper, and cayenne.
  5. 5Combine the cheese sauce with cooked macaroni and transfer to a greased 9x13 inch baking dish.
  6. 6Mix panko breadcrumbs with 2 tablespoons melted butter, then sprinkle over the top of the mac and cheese.
  7. 7Bake for 20-25 minutes until the top is golden brown and the sauce is bubbly around the edges.
