Ingredients

  • 1.5 lbs pork tenderloin
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 red bell pepper, sliced red bell pepper
  • 1 yellow bell pepper, sliced yellow bell pepper
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth

Directions

  1. 1Preheat oven to 400°F. Pat the pork tenderloin dry and season all sides with salt, pepper, and garlic powder.
  2. 2Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork on all sides for 2 minutes per side until browned, then remove and set aside.
  3. 3Add sliced peppers, onion, and minced garlic to the skillet. Sauté for 3 minutes until softened.
  4. 4Return the pork to the skillet, nestling it among the vegetables. Pour chicken broth around the pork.
  5. 5Transfer the skillet to the oven and bake for 18-20 minutes until the pork reaches an internal temperature of 145°F.
  6. 6Rest for 5 minutes, then slice and serve with the roasted peppers and pan juices.
