- •2 tablespoons olive oil

- •1 teaspoon garlic powder
- •1 red bell pepper, sliced red bell pepper
- •1 yellow bell pepper, sliced yellow bell pepper
- •1 large onion, sliced
- •2 cloves garlic, minced
- •1/2 cup chicken broth
Directions
- 1Preheat oven to 400°F. Pat the pork tenderloin dry and season all sides with salt, pepper, and garlic powder.
- 2Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork on all sides for 2 minutes per side until browned, then remove and set aside.
- 3Add sliced peppers, onion, and minced garlic to the skillet. Sauté for 3 minutes until softened.
- 4Return the pork to the skillet, nestling it among the vegetables. Pour chicken broth around the pork.
- 5Transfer the skillet to the oven and bake for 18-20 minutes until the pork reaches an internal temperature of 145°F.
- 6Rest for 5 minutes, then slice and serve with the roasted peppers and pan juices.
